Ingredients

  • 1 cal cooking spray*
  • 1 medium onion, finely chopped
  • 2 garlic cloves, crushed
  • 1cm piece fresh root ginger, peeled and grated
  • 1 tsp ground cumin
  • 1 tbsp curry powder*
  • 400g can chickpeas, drained and rinsed
  • 400g can chopped tomatoes
  • 200g baby spinach
  • ½ small pack fresh coriander, finely chopped
  • 2 tbsp plain unsweetened soya yogurt with added calcium

Method

  1. Spray a large non-stick frying pan with 1 cal cooking spray and put it over a medium heat. Fry the onion, garlic and ginger for 5 minutes.
  2. Add the cumin and curry powder and cook for 1 minute more. Add the chickpeas and tomatoes, then fill half the tomato can with water, add it to the pan and simmer for 5 minutes.
  3. Stir in the spinach and coriander and cook for a minute or so to wilt the spinach. Remove from the heat, season to taste and stir in the soya yogurt to serve.
