
Ingredients
- 1 cal cooking spray*
- 1 medium onion, finely chopped
- 2 garlic cloves, crushed
- 1cm piece fresh root ginger, peeled and grated
- 1 tsp ground cumin
- 1 tbsp curry powder*
- 400g can chickpeas, drained and rinsed
- 400g can chopped tomatoes
- 200g baby spinach
- ½ small pack fresh coriander, finely chopped
- 2 tbsp plain unsweetened soya yogurt with added calcium
Method
- Spray a large non-stick frying pan with 1 cal cooking spray and put it over a medium heat. Fry the onion, garlic and ginger for 5 minutes.
- Add the cumin and curry powder and cook for 1 minute more. Add the chickpeas and tomatoes, then fill half the tomato can with water, add it to the pan and simmer for 5 minutes.
- Stir in the spinach and coriander and cook for a minute or so to wilt the spinach. Remove from the heat, season to taste and stir in the soya yogurt to serve.
