
Ingredients
- 500g spinach, roughly chopped
- 1 medium onion, finely diced
- 2 tbsp olive oil
- 1 garlic clove, crushed
- 1 tbsp flour
- 450ml milk
- 100g blue cheese
- salt and pepper
Method
Prep time: 5 min
Cooking time: 20 min
- Step 1 Steam the spinach for 5-10 minutes.
- Step 2 Sauté the onion in hot oil with the crushed garlic for 5 minutes. Add the flour and cook for 1 minute.
- Step 3 Gradually add the milk and stir until thickened. Simmer gently for 3 minutes.
- Step 4 Crumble the cheese and add to the sauce. Stir in the spinach and season with the salt and pepper. Cook, stirring until the cheese has melted.

NB – we have done this a couple of times now and feel it needs more flour to milk than they say, this time we did 3 tbs to the amount of milk.
