Veg tagliatelle

Ingredients

  • 150g Co-op dried tagliatelle
  • 240g pack Co-op carrot, broccoli, baby corn and sugar snap peas
  • 2 tsp Co-op olive oil
  • 1 clove garlic, crushed
  • Zest of 1 lemon
  • 100g Co-op light soft cheese with garlic and herbs
  • 1 tbsp flat leaf parsley, chopped

Method

  1. Cook the pasta according to the pack instructions, then drain and set aside, reserving 2 tbsp of the cooking water
  2. Meanwhile, boil the veg for 4 mins
  3. Drain and cut any larger bits into bite-sized pieces
  4. In the pan used for the pasta, heat the oil and gently cook the garlic for 1 minute
  5. Add the lemon zest, soft cheese, cooked veg, pasta and reserved water, and parsley
  6. Season, then toss together until evenly mixed
  7. Heat through gently and serve immediately
