Ingredients
- 150g Co-op dried tagliatelle
- 240g pack Co-op carrot, broccoli, baby corn and sugar snap peas
- 2 tsp Co-op olive oil
- 1 clove garlic, crushed
- Zest of 1 lemon
- 100g Co-op light soft cheese with garlic and herbs
- 1 tbsp flat leaf parsley, chopped
Method
- Cook the pasta according to the pack instructions, then drain and set aside, reserving 2 tbsp of the cooking water
- Meanwhile, boil the veg for 4 mins
- Drain and cut any larger bits into bite-sized pieces
- In the pan used for the pasta, heat the oil and gently cook the garlic for 1 minute
- Add the lemon zest, soft cheese, cooked veg, pasta and reserved water, and parsley
- Season, then toss together until evenly mixed
- Heat through gently and serve immediately
