Mexican lime chicken

2 essential Waitrose British Chicken Breast Fillets, thinly sliced
Zest and juice of 1 essential Waitrose Lime
1 tbs essential Waitrose Vegetable Oil
1 essential Waitrose Red Pepper, sliced
400g can essential Waitrose Kidney Beans, drained and rinsed
195g can essential Waitrose Sweetcorn, drained
340g jar essential Waitrose Tomato and Chilli Pasta Sauce

Mix the chicken with the lime zest and juice.

Heat the oil in a large frying pan and fry the chicken and pepper for 5 mins until the chicken is cooked through with no pink meat.

Add the kidney beans, sweetcorn and sauce, cover and simmer for 10 minutes, stir occasionally.  Great served with rice or jacket potatoes (optional).
