2 to 21/2 lb forehock of bacon, diced
3 to 4 onions, peeled and chopped
1/2 lb haricot beans
Black pepper
Pinch of dry mustard powder
A bayleaf
Water or stock
Place the haricot beans in a bowl of cold water and leave to soak overnight. Next day boil in fresh water in a saucepan for 10 minutes and drain well. Layer the bacon, onions and beans in a saucepan, add seasoning and the bayleaf then pour over sufficient water or stock to cover. Cover the saucepan, bring to the boil, then simmer gently for 11/2 to 2 hours or until the bacon and beans are tender. Remove the bayleaf and serve with boiled potatoes and cabbage or carrots. Serves 4 to 6.
