Ingredients

1 lb mixed root vegetables

2 ounces coarse or medium oatmeal

Knob of dripping

Vegetable stock

1 teaspoonful meat essence or cube

Sprinking of paprika

Chopped parsley and herbs to flavour

Pepper and salt to taste

Method

Prepare and dice vegetables.  Fry in dripping until slightly cooked; add oatmeal and stir over fire until fat is absorbed.  Season with herbs, paprika, pepper and salt and add meat extract.  Cover with vegetable stock and simmer gently for one hour.

A little corned beef, cooked meat or fish may be added last thing.

To make Vegetarian use Butter and Oil or Vegetable shortening and use Marmite or Vegemite instead of the meat extract.
