Ingredients

4 x 175g salmon fillets
4 tbs fresh sourdough breadcrumbs
1 tbs chopped basil
1 tbs chopped flat-leaf parsley
2 rashers smoked bacon finely chopped
2 tbs olive oil
salt and pepper

Method

Put the salmon onto a lightly greased tray.  Combine the rest of the ingredients in a bowl and spoon on top of the salmon pressing it on firmly.

Ore-heat the oven to 200C/400F/gas mark 6 and bake the fish for 10-12 minutes, then place the fish under a very hot grill for 2 minutes or until the topping is golden and crispy.  Serve with new potatoes and green beans.
