Prawns and Ginger

Ingredients

2 teaspoons oil
680g peeled prawns
2.5 cm piece fresh root ginger, peeled and finely chopped
2 cloves of garlic, finely chopped
2 – 3 spring onions, chopped
1 leek, white part only, cut into thin strips
120g peas, shelled
175g beansprouts
2 tablespoons dark soy sauce
1 teaspoon sugar
pinch of salt

Method

  1. Heat the oil in a wok and stir fry the prawns for 2 – 3 minutes.  Set the prawns aside.
  2. Re-heat the oil and add the ginger and garlic.  Stir quickly, then add the spring onions, leeks and peas.  Stir fry for 2 – 3 minutes.
  3. Add the beansprouts and prawns to the cooked vegetables.  Stir in the soy sauce, sugar and salt and cook for 2 minutes.  Serve immediately.
