Ingredients
1 pound pork
1 cup water
1 tbs soy sauce
1 tbs sherry
0.5 tsp sugar
0.5 tsp salt
0.5 lb fresh mushrooms
Method
Cut pork in 2 inch cubes and place with water in a heavy pan. Bring to a boil, then simmer, covered, 30 minutes. Drain, reserving liquid.
Add soy sauce to pork in pan. Cook over low heat, turning meat frequently until soy sauce is absorbed. Stir in sherry, sugar and salt.
Return reserved liquid and re-heat; then simmer, covered, 20 minutes, turning once or twice.
Stem fresh mushrooms; arrange caps under pork cubes and simmer, covered, 20 minutes more.
