Ingredients
1 Chicken (About 3 lbs in weight)
1 leek stalk
0.5 lb bacon
1 tablespoon soy sauce
2 tablespoon sherry
0.75 cup red dates
Method
Wipe chicken with a damp cloth and chop, bones and all in 2 inch pieces. Cut leek in half inch sections.
Slice bacon thick and then into 1 inch strips. Place in a cold pan and brown lightly over a medium heat. Drain on paper towelling.
Reheat bacon fat. Add leek; stir fry a few times. Add chicken and brown quickly.
Return bacon. Add soy sauce, sherry and red dates. Reduce heat and simmer, covered, stirring occasionally until tender (about 30 minutes).
Variation: Disjoint chicken, instead of chopping it in sections. Simmer about 45 minutes in step 4.
