2lb lean minced beef
3 tbs seasoned flour
2 tbs oil
2 oz mushrooms – sliced
4 carrots – cubed
2 sticks celery – sliced
2 large onions – sliced
4 oz swede or turnip – cubed
2 pints beef stock
1 small can tomatoes
Pinch of dried mixed herbs
Salt and pepper
2 tsp brown sugar
Set oven to 300F, 150C, Gas Mark 2. Heat the oil in a large frying pan, mix the meat with the seasoned flour and brown well in the pan. Remove to a deep casserole dish, put the fresh vegetables in the frying pan, cover and sweat for a few minutes; the add the rest of the ingredients and mix well. Check the seasoning and then pour over the meat in the casserole and stir well. Cover and cook slowly for about 1.5 hours. Serve with French fried potatoes and a green vegetable.
